Mango & Vanilla Chia Pots Recipe
We like quick and easy snacks here at Rainbow Sanctuary. Here is one of our favourites for you to enjoy.
2 mangos peeled deseeded and chopped small
1-2 tbs Coconut Water
Purée mango with a little coconut water until smooth, place in the bottom of serving jar and chill.
Chia Seed Pudding
4 Tbs chia seeds
250ml brown rice milk
2 Tsp maple syrup
1 Tsp vanilla paste
Whisk all pudding ingredients together and let stand for 10 minutes, whisk again.
Spoon on top of purée and chill for 30 minutes or overnight.
Top with your favourite fruit and enjoy!
Chia seeds are magical!
They are an excellent source of omega-3, rich in antioxidants, and are high in linoleic acid, a fatty acid that helps the body absorb fat-soluble vitamins A, D, E and K. They also provide iron, fibre and calcium.
This nutrition will be great for our skin, will support the heart and digestive health, boosts our energy and metabolism and build stronger bones and muscles.
What a precious gift from Mother Nature.
