Gluten-Free Vegan Choc-Chip Cookies Recipe
All kids love to help Mum with mixing and pouring the ingredients together, and there is nothing better to let kids experiment with than chocolate chip cookies. Kids can get involved and have a special job to do and they can see and taste the results of their hard work. Baking chocolate chip cookies is a great family building activity that can connect us and fill our day with fun!
1/2 cup unflavoured coconut oil (solid)
1 1/4 cup coconut sugar
1 tsp vanilla
1/4 cup rice milk
Pinch of sea salt
2 1/4 cup self raising gluten-free flour
2 vegan eggs
100gm vegan chocolate broken into small pieces
Preheat oven to 180’C
Cream oil & sugar with a whisk or electric mixer.
Add vanilla, milk, vegan eggs, salt and fold through until smooth.
Mix through flour, the dough will become smooth.
Mix through chocolate evenly.
Use a tablespoon measure to roll into even balls and place onto a lined oven tray.
Flatten with a fork half way.
Makes around 30 yummy biscuits
Bake for 10 mins for soft, 15 mins for crunchy.
